I thought I would share my families favorite pancake recipe with you all today.
Buttermilk Pancakes (with chocolate chips of course)
1 egg
2 Tbsp. oil
1 Tbsp. sugar
1/2 tsp. soda
1 cup buttermilk (I use 1 TBS. vinegar and fill measuring cup to 1 C. with milk, I never have buttermilk).
1 cup flour
1 tsp. baking powder
1/2 tsp.salt
Beat egg; add remaining ingredients and beat until smooth. Pour batter onto hot griddle. Turn pancakes as soon as they are puffed and full of bubbles, but before bubbles break.
I pour 1/4 of batter for each pancake. My family loves chocolate chips in them so we just sprinkle a few on top after pouring the batter on the griddle. I have tried just pouring them in the batter and I think it ends up way to chocolaty for me and I'm a chocoholic.
Enjoy with syrup and a glass of milk!
